I’ve been craving all things sweet lately. So to keep it healthy, I took inspiration from Choosing Chia and made this delicious Watermelon Fruit Pizza. It’s a great kid-friendly snack for a hot day and also makes the perfect healthy dessert. It has become my latest go-to sweet fix and I’m happy to say there’s no guilt attached.
I’ve made a few different versions already depending on what fresh fruit and toppings I have on hand. It’s easy to switch them up and I love that it tastes great with or without sweetener. My favourite combo so far has been fresh berries, mint, coconut flakes and a drizzle of superfood honey.
MegaFood sent me a few of their booster powders to try and I ended up creating a superfood honey blend using raw wildflower honey and their Daily Energy powder. I’ve always wanted to try Philosophie’s superfood honey but it can be hard to find in Toronto. So this was the perfect opportunity to make my own!
You can get crazy with the garnishes or just keep it simple. I added some flowers from my garden (just for show) but you can just use fresh herbs. I think I’ll give basil a try next time, which would be so good with strawberries, mango and lime. I’ve made this twice in the last two days and am already dreaming up my next batch. Talk about obsessed.
- 6 watermelon slices
- ½ can coconut cream
- 3 strawberries, halved
- ⅓ cup blueberries
- ⅓ cup blackberries
- 2 tsp fresh mint, chopped
- ½ tbsp coconut flakes
- 1 tbsp raw honey
- 1 tsp MegaFood Daily Energy Nutrient Booster Powder
- Using a hand held blender, whip coconut cream until smooth.
- Spread evenly on top of watermelon slices. Add fresh fruit, mint and coconut flakes.
- To create superfood honey, combine raw honey and MegaFood booster powder. Drizzle on top and serve!
